Experience cooking Vietnamese traditional dishes by Chinese students at Haiphong Private University(16/10/2013)

On October 3rd, 2013 at the Student’s Canteen of Haiphong Private University (HPU), students of Tourism Faculty of Guilin University of Technology (GUT) had an opportunity to experience cooking Vietnamese traditional dishes.

   With an aim to introduce the Vietnamese food culture to Chinese students, on October 3rd, 2013 at the Student’s Canteen of Haiphong Private University (HPU), students of Tourism Faculty of Guilin University of Technology (GUT) had an opportunity to experience cooking Vietnamese traditional dishes. This is a part of practicum of Vietnamese Cultural Background course.

   The dishes to experience are “Spring Rolls and Grilled Pork”. Using method “learning by doing”, students have a deep understanding of traditional Vietnamese food art which have been quite well-known for foreigners.

   Together with the guidance of their teachers, the students were eager to prepare ingredients, grill meats, roll and fry Spring Rolls and make their own sauces since early in the morning. This process helps them understand some basic features of Vietnamese food such as Mis-en-place (mixture of different ingredients and spices), vegetarianism (vegetable is essential part in every Vietnamese dish), balance of yin and yang (cold-bearing food will be neutralized by hot spices).

   Through the image of the Spring Rolls and dipping sauce, it is understood that Vietnamese dishes are normally a mixture of “Wu Xing” elements such as 5 colours (5 basic colours), 5 spices (spicy, sour, bitter, sweet and salty), 5 substances (carbohydrate, mineral, protein, fat and water). Especially, dipping sauce is considered as Vietnamese national spirit.   

   “Boiled Dumplings” - a well-known traditional Chinese dish was also introduced by GUT students this time which makes the Vietnam-China cultural exchange diversified. Upon completion, although all students were quite tired but they enjoyed the dishes. It is an unforgettable memory during their stay at HPU.
